Cheap recipe # 2

Hey all. Betty Rose here with your second cheap recipe. This dish is super simple and is one of the comfort foods I go to a lot. My mom used to make this all the time and now I will share it with ya'll! This recipe is pretty much 3 ingredients not including your cooking oil or salt and pepper and prep time is pretty minimal also. Here's what you'll need.

1 pkg of polish sausage
7-9 red or yukon gold potatoes
1-2 yellow onions
2-3 Tbsp of veg or canola oil
Salt and pepper to taste

Slice onions in paper thin half moon shapes.
Preheat your oil in a large pan on medium low. Once the oil is hot place the onions in the pan and cook until tender and translucent. When the onions are done remove from the oil and set aside. Slice your sausage in to half inch rings and place in the oil to lightly brown. When your sausage is done set aside. Sausage will render some fat adding to the oil in the pan. If you need to cook the sausage in batches, that is fine. If you find you need to add a little more oil to the pan at any point that is fine as well.
Wash the potatoes off really well. There is no need to peel them for this dish. When your potatoes are clean, slice them in very thin rounds. Place the potatoes in the pan and season them with the salt and pepper. Once you have the potatoes covered in the fat, add the sausage and onions to the potatoes and mix. Place a lid on the pan and steam for 30 minutes or until potatoes are tender. Taste for seasoning, adjust and enjoy!
