Cheap Recipe #1.

Hey guys Betty Rose here again. I wanted to share a recipe for chicken salad with y'all that I've come up with. The good thing about this particular recipe is most everyone has most of the ingredients in their home already! This chicken salad is not only different and yummy but a great way for parents to get some extra fruit into their kids.

Here's what you'll need.

1 cup of mayonnaise
1/2-1 cup of apples, cored and cubed (I use gala apples)
1/2-1 cup purple or red grapes (sliced lengthwise)
1 cup of craisins
2-3 cups of chicken cubed
Salt and pepper

Preheat your oven to 375
Place your chicken in a baking dish and season both sides with the salt and pepper. Cook for 30 minutes or until done.
While the chicken is cooking mix mayo, cubed apples, sliced grapes, and craisins together. Season lightly with salt and pepper. Set aside.
Once your chicken comes out of the oven let it cool some until you're able to handle it.
Slice your chicken into bite size cubes and combine with the mayo mixture. Give it a taste for seasoning and adjust if needed. Once the chicken salad tastes perfect to you cover and chill it in the fridge for at least a couple hours. After that enjoy!

There are many ways you can serve this chicken salad. Here are some suggestions.

1. Put it on crackers. You can use saltines, ritz, or whatever your favorite cracker may be!
2. Make it into a sandwich. This recipe taste especially good on potato bread.
3. Put in a regular lettuce based salad. Jazz up the normal everyday salad with a couple spoonfuls of this chicken salad.

You can use your imagination on how to serve this tasty dish. Also feel free to use a grocery store rotisserie chicken if that's what you have. This is about using what you've got in your fridge and pantry to help save you time and money!
